Masak....Masak....Masak.....

 
 
 
Kerja memasak sahaja....tak boleh tak masak....ingat pi ingat mai nak masak dan nak kena masak......alahai.Malam semalam kak rus buat bengkang ni memandangkan ada lebihan roti putih dan 2 jantung jagung.Jagung pun dah kelihatan mengecut....ini lebihan buat cucur jagung Jumaat lalu.....kalau lambat sikit pasti jadi .....faham-fahamlah nak sebut pun rasa segan.Selalunya kalau ada lebihan jagung segar kak rus akan hiris nipis-nipis dan simpan dalam freezer.....tapi pasal apa lah jadi pelupa pula.



Yang ini pula buat 2 hari sudah......mulut terasa nak makan hidangan ni....Ayam Lemon...sedap juga tapi tak sesedap Ayam Goreng Berempah.....Resepi ni tak berapa digemari oleh seisi keluarga.....pasal apa....... eeerk.....?Nasib baiklah kak rus buat sosnya berasingan.......



:: AYAM LEMON :: -Dari Majalah Rasa

Bahan-bahan:
1/2 kg dada ayam - dipotong kecil
3 sudu makan kicap
2 sudu makan sos cili
2 biji lemon - ambil jusnya
1 1/2 sudu makan madu
1 sudu makan minyak sayuran
3cm halia - dimayang halus
4 tangkai cili api dicincang (kak rus tambah)
3 ulas bawang putih - dicincang
125ml susu cair
1/2 kiub stok ayam
1 sudu makan tepung jagung
313gm mentega
Garam secukup rasa
Minyak masak untuk menggoreng secukupnya

Cara memasak:
1. Bersihkan ayam dan gaulkan dengan kicap, jus lemon, sedikit minyak sayuran serta madu. Perap selama 1/2 jam.
2. Goreng ayam yang telah diperap tadi hingga garing. tinggalkan sedikit minyak goreng ayam di dalam kuali dan tambahkan mentega.
3. Tumis halia dan bawang putih hingga naik baunya.
4. Kemudian masukkan sos cili dan susu sejat. Biarkan mereneh dan masukkan garam secukup rasa.
5. Masukkan tepung jagung yang telah dibancuh dengan sedikit air.
6. Apabila agak pekat sedikit, masukkan ayam yang telah digoreng. kacaukan agar sama rata dan kuah sebati dengan ayam.
7. Angkat dan hidangkan bersama nasi oren tadi.


Kek ni pula buat petang semalam....buat kecil-kecil....senang tak payah nak potong dan masuk mulut sekali suap.Tekstur keknya tak gebu dan ada rasa masam-masam gitu,pasal kak rus kurangkan penggunaan gula..... eloklah sangat pasal rasa manisnya terletak kat frosting.

Kak rus buat setengah adunan sahaja.

For the baby cakes:
3-1/2 c. all purpose flour
2-1/4 tsp. baking powder
3/4 tsp. kosher salt
1 c. unsalted butter, at room temperature
2-1/2 c. sugar
4 large eggs, at room temperature
5 T. fresh lime juice
2 T. finely grated lime peel
1/2 tsp. neon-green food coloring (found in the baking aisle of grocery store)
1-1/2 cups buttermilk
for the frosting:
8 oz. cream cheese, at room temperature
1-1/2 c. powdered sugar
1/2 c. unsalted butter, at room temperature
1 T. finely grated lime peel
1/2 tsp. vanilla

Preparation
for the baby cakes:

Preheat oven to 350°.

A couple notes: I prefer to use flexible silicone mini muffin pans with no paper liners for this recipe, but you can also prepare metal mini muffin pans with paper liners. The silicone muffin pans I used are here. Also, I found that there are different sized mini muffin pans out there, so your yield and baking time may vary a bit. The silicone pans I used yield a little bigger mini cupcake than others, which I also happen to like.


Whisk flour, baking powder, and salt in medium bowl and set aside. In a large bowl, beat butter until smooth. Add sugar and beat to blend. Beat in eggs 1 at a time, then the lime juice, lime peel, and food coloring. Batter may look curdled, but that's just fine. Beat in the flour mixture alternately with the buttermilk, in 3 additions. Spoon batter into liners, about 2/3 full. Bake cupcakes until tester inserted into center comes out clean. This took about 20 minutes for me, but it will depend on the size of your tins, so pay close attention to your baking time. Cool 10 minutes and remove from pan. Cool completely before adding frosting.


for the frosting:

Beat all ingredients in medium bowl until smooth. With a medium-large plain round tip, pipe frosting onto cooled cupcakes, or simply spread it on with a knife. Sprinkle a bit of fresh lime zest over tops, if desired.
